1 medium apple, peeled and diced

1 cup fresh blueberries

1 teaspoon sugar

1/2 teaspoon ground cinnamon

1 tablespoon all-purpose flour

4 tablespoons unsalted butter, cut into small pieces

4 tablespoons brown sugar

2 tablespoons all-purpose flour

1/4 teaspoon ground cinnamon

4 tablespoons quick-cooking oats

Directions

  1. Preheat your oven to 350 degrees Fahrenheit.

  2. In a medium mixing bowl, combine the diced apple, blueberries, 1 teaspoon sugar, and 1/2 teaspoon ground cinnamon. Add 1 tablespoon flour and stir gently until the fruit is evenly coated. Divide the fruit mixture between two lightly greased small ramekins or baking dishes.

  3. In a separate small bowl, combine the 2 tablespoons flour and 4 tablespoons brown sugar. Add the butter pieces and use a fork or your fingertips to work the butter into the flour mixture until it resembles coarse breadcrumbs. Stir in the 1/4 teaspoon ground cinnamon and the quick-cooking oats until well combined.

  4. Evenly distribute the oat crumble topping over the fruit in each ramekin, gently pressing it down slightly.

  5. Bake for 35 to 40 minutes, until the fruit is tender when pierced with a fork and the crumble topping is golden brown.

  6. Remove from the oven and let cool for 2 to 3 minutes. Serve warm, optionally topped with vanilla ice cream if desired.
