Chicken Parmesan Sub Skewers

Ingredients
4 boneless skinless chicken breasts
2 cups marinara sauce
¼ cup shredded parmesan cheese
1 tube pillsbury breadstick dough
shredded mozzarella cheese for topping
8 wooden or metal skewers
Directions
If using wooden skewers, soak them in water for 30 minutes. Cut chicken breasts into 1-inch cubes.
Place the chicken cubes in a large bowl or ziplock bag with the marinara sauce. Toss until all pieces are evenly coated.
Pour the shredded parmesan cheese into a medium bowl. Remove each marinara-coated chicken piece and dredge thoroughly in the parmesan, ensuring complete coverage. Set aside on a plate.
Unroll the breadstick dough and separate into individual breadsticks. Thread one breadstick onto a skewer starting at one end, then add a piece of parmesan-coated chicken. Wrap the breadstick around the chicken and thread it back onto the skewer. Repeat with another chicken piece, alternating breadstick and chicken until the breadstick is used (approximately 3 chicken pieces per skewer). Repeat with remaining breadsticks and skewers.
For grilling: Heat grill to medium-high heat. Grill skewers for 10 minutes per side, until chicken reaches an internal temperature of 165°F. For oven baking: Preheat oven to 400°F and bake on a lined baking sheet for 18-20 minutes until chicken reaches an internal temperature of 165°F.
Remove skewers from heat and immediately sprinkle generously with shredded mozzarella cheese. Allow cheese to melt for 1-2 minutes before serving.
