Ingredients

2 cups water

½ cup fresh lime juice

¼ teaspoon stevia

20 fresh mint leaves, sliced into thin ribbons

Directions

  1. Pour the water and lime juice into a mixing bowl and stir well to combine.

  2. Add the stevia to the lime and water mixture, stirring until fully dissolved.

  3. Slice the mint leaves into thin ribbons and divide them evenly among 8 popsicle molds.

  4. Slowly pour the lime mixture over the mint leaves in each mold, filling them to the top.

  5. Insert popsicle sticks into the center of each mold, making sure they stand upright.

  6. Place the molds in the freezer for at least 6 to 8 hours, or until the popsicles are completely frozen solid.

  7. To remove the popsicles, run warm water over the outside of the molds for a few seconds, then gently push the popsicles out from the bottom.

  8. Serve immediately and enjoy, or store the finished popsicles in a freezer-safe container for up to 2 weeks.
