½ cup soy mayonnaise

¼ cup olive oil

2 tablespoons apple cider vinegar

2 tablespoons stone ground mustard

2 tablespoons ketchup

1½ teaspoons prepared horseradish

⅛ teaspoon hot pepper sauce

1 large clove garlic clove, minced

1 tablespoon fresh chives, finely chopped

2 tablespoons water

2 medium tomatoes, quartered

4 leaves red or green leaf lettuce leaves

12 slices cucumber slices

Directions

  1. Prepare the Creole dressing by combining the soy mayonnaise, olive oil, apple cider vinegar, stone ground mustard, ketchup, prepared horseradish, hot pepper sauce, minced garlic, and fresh chives in a food processor or blender.

  2. Add 2 tablespoons of water to the dressing mixture and process until the ingredients are smooth, well combined, and uniform in texture.

  3. For each of the four servings, arrange 2 quarters of tomato and 3 slices of cucumber on a leaf of lettuce.

  4. Drizzle the desired amount of Creole dressing over each salad just before serving.
