Ingredients
2 boneless, skinless chicken breasts, cooked and chilled
1 ripe avocado
1 tablespoon fresh lime juice
8 grape tomatoes, halved
½ small onion, finely chopped
Salt to taste
Directions
Cut the cooked and chilled chicken breasts into ½-inch cubes and set aside.
Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork until it reaches an almost smooth consistency with just a few small chunks.
Stir the lime juice into the mashed avocado until well combined.
Add the cubed chicken, chopped onion, and halved tomatoes to the avocado mixture.
Gently toss all ingredients together until the salad is evenly coated with the avocado mixture. Season with salt to taste and serve immediately.
