Ingredients

4 cups Shredded cabbage or coleslaw mix

1½ cups Canned mandarin oranges, drained

Peanuts, unsalted (optional)

⅔ cup Fat-free Italian salad dressing

2 tablespoons Low-sodium soy sauce

Directions

  1. Wash your hands thoroughly with soap and water before beginning. If using fresh cabbage instead of a pre-shredded mix, rinse it under cold water and pat dry, then shred finely.

  2. In a large mixing bowl, combine the shredded cabbage and mandarin oranges that have been drained of their liquid. Add the optional peanuts if desired.

  3. Pour the Italian dressing and soy sauce over the cabbage mixture. Toss everything together until the vegetables and fruit are evenly coated with the dressing.

  4. Let the slaw rest for 5 to 10 minutes to allow the flavors to meld before serving, or refrigerate until ready to serve.
