Ingredients
1 medium white or red onion, very thinly sliced
1 teaspoon sugar
1/4 cup distilled white vinegar
2 tablespoons water
Thinly sliced fresh chilies, optional
Directions
In a medium or large bowl, combine the sliced onions, sugar, vinegar, and water.
Toss and massage the mixture with your hands for 1–2 minutes, breaking up the onion layers and ensuring all the slices are evenly coated with the vinegar mixture and sugar is fully dissolved.
If desired, add the thinly sliced fresh chilies and toss to combine.
Let the mixture sit at room temperature for 10 minutes, allowing the onions to soften slightly and absorb all the flavors.
