½ cup Whole hull-on pumpkin seeds

2 teaspoons Kosher salt

Directions

  1. Heat a dry skillet over medium heat. Add the pumpkin seeds and toast for 3-4 minutes, stirring frequently, until fragrant and the seeds begin to pop slightly. Be careful not to burn them.

  2. Transfer the toasted seeds to a mortar and pestle or spice grinder. Let cool for 1-2 minutes until safe to handle.

  3. Grind the toasted seeds to a coarse, crumbly texture—not a fine powder. The seasoning should retain some texture with visible seed particles.

  4. Add the kosher salt and mix until evenly distributed throughout the ground seeds.

  5. Transfer to a small jar or container. Use immediately or store in an airtight container at room temperature for up to 1 week.
