A vibrant, naturally sweet cordial made from wild rosehips and sugar. This traditional drink concentrate is prepared by extracting the essence from rosehips through two successive infusions, then reducing and sweetening the strained liquid. Dilute with water or sparkling water to serve. Perfect as a refreshing beverage, drizzle over desserts, or use in cocktails.

Ingredients

1 kg wild rosehips, washed and roughly chopped

2 litres boiling water

1.5 litres water

350 g caster sugar

Directions

  1. Place the washed and chopped rosehips into a large pan. Pour 2 litres of boiling water over them. Return the mixture to a boil, then immediately remove from heat and allow the rosehips to steep for 15 minutes to extract their flavour and colour.

  2. Carefully strain the infusion through a jelly bag or doubled layer of muslin cloth into a clean bowl, pressing down gently on the rosehips to extract as much liquid as possible. Reserve all the strained liquid and set aside.

  3. Return the rosehip pulp that remains in the muslin to the large pan. Add 1.5 litres of fresh water and bring to a boil. Remove from heat and let steep for 10 minutes to extract any remaining flavour.

  4. Strain this second infusion through the jelly bag or muslin into the reserved liquid from step 2, again pressing gently to extract all the juice. Discard the spent pulp.

  5. Pour all the combined strained rosehip liquid into a clean, heavy-bottomed pan and bring to a rolling boil. Boil rapidly, stirring occasionally, until the volume reduces to approximately 1 litre. This concentrates the flavour.

  6. Skim away any foam or scum that rises to the surface during boiling using a clean spoon. Stir in the caster sugar until it has completely dissolved into the reduced liquid.

  7. Remove the pan from heat and allow to cool slightly. Carefully pour the finished cordial into sterilised glass bottles. Once cooled completely, seal and store in the refrigerator for up to three months. Dilute with water, sparkling water, or use as desired when serving.
