4 sheets matzo

3 tablespoons extra-virgin olive oil

1 teaspoon flaky sea salt

½ teaspoon freshly ground pepper

½ teaspoon dried thyme (optional)

¼ teaspoon ground sumac (optional)

Directions

  1. Preheat your oven to 375°F (190°C).
