One-Pot Garlicky Shrimp & Broccoli

Ingredients
3 tablespoons extra-virgin olive oil
6 medium cloves garlic cloves, sliced
4 cups small broccoli florets
½ cup diced red bell pepper
½ teaspoon salt
½ teaspoon ground black pepper
1 pound peeled and deveined raw shrimp (21-30 count)
2 teaspoons lemon juice
Directions
Heat 1½ tablespoons of olive oil in a large skillet or wide pot over medium heat. Add half of the sliced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
Add the broccoli florets and diced red bell pepper to the pan. Season with ¼ teaspoon salt and ¼ teaspoon ground pepper. Cook for 5-6 minutes, stirring occasionally, until the broccoli begins to soften and develop light browning.
Push the vegetables to the sides of the pan. Add the remaining 1½ tablespoons of olive oil to the center and place the shrimp in a single layer. Sprinkle with the remaining sliced garlic, ¼ teaspoon salt, and ¼ teaspoon ground pepper.
Cook the shrimp for 2-3 minutes on the first side without stirring. Flip the shrimp and cook for another 1-2 minutes, stirring everything together, until the shrimp are opaque and have reached an internal temperature of 145°F.
Remove from heat and drizzle with 2 teaspoons of lemon juice. Taste and add additional lemon juice if desired. Stir gently to combine all ingredients and serve immediately.
