Ingredients

1 grapefruit, peeled and segmented into bite-sized pieces

1 orange, peeled and segmented into bite-sized pieces

10 cups fresh mixed greens or lettuce

1 small red onion, sliced thin

2 tablespoons cider vinegar

1 tablespoon fresh lime juice

1 tablespoon vegetable oil

1 tablespoon water

1/4 teaspoon black pepper

1/4 teaspoon ground cumin

Directions

  1. Wash your hands thoroughly with soap and warm water before preparing the salad.

  2. Peel the grapefruit and orange, removing all white pith. Cut each fruit into bite-sized segments, removing any seeds.

  3. Thinly slice the red onion and add it to a large salad bowl along with the fresh greens and citrus pieces.

  4. In a small bowl, whisk together the cider vinegar, lime juice, vegetable oil, water, black pepper, and ground cumin until well combined and emulsified.

  5. Just before serving, drizzle the vinaigrette over the salad and toss gently until all ingredients are lightly coated with dressing.
