A tangy, umami-rich sauce combining the bright acidity of rice vinegar with salty soy, balanced sweetness, and nutty sesame oil. This glossy dipping or stir-fry sauce thickens slightly with cornstarch and brings authentic Chinese flavor to potstickers and other dumplings.

Ingredients

2 tablespoons rice vinegar

2 tablespoons soy sauce

2 tablespoons water

1 teaspoon cornstarch

1 teaspoon granulated sugar

1/2 teaspoon Asian sesame seed oil

Directions

  1. In a small bowl, whisk together the rice vinegar, soy sauce, and water until combined.

  2. Sprinkle the cornstarch and granulated sugar into the liquid, stirring until no lumps remain and the cornstarch is fully dissolved.

  3. Drizzle in the sesame oil and stir until the sauce is uniform and glossy.

  4. If using the sauce for stir-frying, heat in a wok or skillet over medium-high heat, stirring constantly, until it thickens (about 1–2 minutes). For dipping, serve at room temperature or slightly warmed.
