Ingredients
¼ loaf Mini baguette or Italian bread, about 9 inches long, split lengthwise
½ cup Pizza sauce
½ cup Part-skim mozzarella or cheddar cheese, shredded
¼ cup Green bell pepper, chopped
¼ cup Fresh mushrooms, sliced
Italian seasoning, optional
Directions
Wash your hands thoroughly with soap and warm water before beginning.
Place the split baguette or bread halves cut-side up on a toaster oven tray. Toast in a preheated 350°F oven or toaster oven for 2-3 minutes until the surface is lightly golden and slightly crispy.
Remove the toasted bread from the oven. Divide the pizza sauce evenly between both bread halves, spreading it in a thin layer over the entire surface.
Distribute the chopped green bell pepper and sliced mushrooms evenly over the sauce on each bread half.
Sprinkle the shredded mozzarella or cheddar cheese over the vegetables on each half, dividing the cheese equally.
Season each bread half lightly with Italian seasoning if desired.
Return the bread to the toaster oven or regular oven preheated to 350°F. Bake for 2-3 minutes, or until the cheese is completely melted and bubbly.
Remove from the oven and let cool for 1 minute before serving.
Comments
This recipe hits the sweet spot for a quick weeknight meal with ingredients universally available at any Charlotte grocer and minimal cost—expect under $4 total, dominated by cheese and bread. The stated ten minutes is honest if you start with pre-sliced vegetables or don't mind them slightly chunky, though finely prepping two peppers and mushrooms realistically adds five minutes unless you're practiced. The dish feeds two as a light dinner or four as an appetizer, reheats adequately in a toaster oven, and requires no active attention once assembled, making it genuinely fuss-free for households with varying schedules.
