1 baguette, thinly sliced

4 oz feta cheese, crumbled

1/2 cup fresh basil, finely chopped

4 medium peaches, halved and pitted

Directions

  1. Preheat your grill to medium heat. Arrange the baguette slices on a baking sheet and lightly brush or spray with oil if desired. Toast in the oven at 375°F for 3-4 minutes until lightly golden and crispy, then set aside.

  2. Place the peach halves cut-side down on the preheated grill grates. Cook for 5 minutes until golden grill marks develop and the surface begins to caramelize.

  3. Carefully flip the peaches and grill the skin side for another 5 minutes until the peaches are tender and show additional grill marks.

  4. Remove the grilled peaches from the grill and let them cool until comfortable to handle, about 2-3 minutes.

  5. Once cooled, gently slip off the skins and discard them. Cut the peaches into small bite-sized pieces and transfer to a serving bowl.
