Ingredients
12 oz buttermilk refrigerator biscuits
2 pounds barbecue beef, sliced
1 cup shredded cheddar and Monterey Jack cheese blend
Directions
Preheat oven to 375°F. Remove biscuits from the refrigerator and carefully separate them.
Lightly grease a standard 12-cup muffin tin. Press each biscuit gently into the bottom and sides of a muffin cup to form a cup shape, allowing the edges to extend slightly above the rim.
Bake the biscuit cups for 8–10 minutes until they are just beginning to firm up but not yet fully golden.
While the biscuits are baking, warm the barbecue beef in a skillet over medium heat, stirring occasionally, until heated through (about 5 minutes).
Carefully remove the muffin tin from the oven. Divide the warm barbecue beef evenly among the biscuit cups, filling each one generously.
Top each cup with approximately 1 tablespoon of shredded cheese blend.
Return the muffin tin to the oven and bake for 5–7 minutes more, until the cheese is melted and the biscuit edges are golden brown.
Let cool for 1–2 minutes in the pan, then carefully remove each cup using a spatula. Serve warm.
