Ingredients
1 cup Old-fashioned rolled oats (gluten-free certified if needed)
½ cup Unsweetened cocoa powder
60 g Plant-based vanilla protein powder
2 cup Frozen unsweetened blueberries, thawed and well-drained
3 tbsp Water, as needed
Directions
In a large mixing bowl, combine the rolled oats, cocoa powder, and plant-based protein powder. Stir until the dry ingredients are evenly distributed with no visible pockets of separate powders.
Add the thawed and well-drained blueberries to a food processor. Pulse until the blueberries break down into a smooth, uniform puree.
Pour the blueberry puree into the oat mixture and stir with a sturdy spoon or spatula until fully incorporated, breaking up any clumps of dry ingredients. The mixture should begin to hold together when pressed.
If the mixture appears too dry to hold together, add water 1 teaspoon at a time, stirring gently after each addition, until the mixture is moist enough to stick together when pressed firmly.
If the mixture is too wet and sticky to shape easily, cover and refrigerate for at least 1 hour until the mixture becomes firm.
Once the mixture reaches the right consistency, roll it into 30 equal small balls about the size of a walnut, using damp hands if needed to prevent sticking. Store in an airtight container in the refrigerator for up to 1 week.
Comments
Every ingredient is stocked year-round at Harris Teeter, Food Lion, Walmart, and ALDI—no special trips needed. The cost runs roughly $0.35 to $0.45 per bite, driven mainly by the plant protein powder, but that's reasonable for a portable snack. The stated 45 minutes is honest; most of that is chilling time, and active prep is closer to 10 minutes of mixing and rolling. The recipe makes 30 bites, freezes well, and suits grab-and-go mornings, though blueberries (fresh or frozen both work) are not a North Carolina staple like they might be elsewhere—they're a neutral choice rather than a local highlight.
