3/4 cup granulated sugar
1 1/4 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup softened butter for crust
1 teaspoon vanilla extract
1 large egg
12 ounces cream cheese, softened
1/4 cup softened butter for frosting
1 teaspoon vanilla for frosting
1 1/4 cups powdered sugar
7-10 fresh strawberries, sliced
5-6 fresh kiwis, peeled and sliced
1 fresh mango, peeled and sliced
1/2 cup fresh blueberries
1 small bunch red or green grapes, halved
Directions
In a large mixing bowl, combine the softened butter and granulated sugar. Beat together using an electric mixer or stir vigorously until well blended and creamy. Add the egg and 1 teaspoon vanilla extract, mixing until fully incorporated.
Sift the flour, baking powder, and salt together into the wet mixture. Stir until just combined into a uniform dough. Do not overmix.
Cover the dough and refrigerate for 30 minutes to chill and firm up.
While the dough chills, preheat your oven to 350°F. Lightly grease a 14-inch round pizza pan or baking stone, or line it with parchment paper.
Remove the chilled dough from the refrigerator and place it on the prepared pan. Using your hands or a rolling pin, gently press and stretch the dough to form an even layer across the pan, leaving a slight lip around the edge for a crust.
Bake the crust for 12 minutes, until the edges are lightly golden and the surface is set but not deeply browned. Remove from the oven and allow the crust to cool completely on the pan.
While the crust cools, prepare the cream cheese frosting. In a clean mixing bowl, beat together the softened cream cheese, 1/4 cup softened butter, powdered sugar, and 1 teaspoon vanilla extract using an electric mixer. Continue beating until the mixture is smooth, creamy, and light, about 2-3 minutes.
Once the cookie crust has cooled completely, spread the cream cheese frosting evenly over the surface. Use an offset spatula or the back of a spoon to create an even layer. Return the frosted pizza to the refrigerator for at least 20 minutes to allow the frosting to firm up.
Just before serving, arrange the fresh fruit toppings in an attractive pattern over the frosting. Place strawberry slices, kiwi slices, mango slices, blueberries, and halved grapes in a visually appealing design. Serve chilled and slice into 8 portions.
