Homemade Sugar-Free Sweet Chili Sauce

Ingredients
2 medium garlic cloves, peeled
1 cup mild honey
8 oz fresh medium-hot red chilies, stems trimmed
1 1/2 cups rice wine vinegar
Directions
Trim the stems from all fresh red chilies. Roughly chop about one-sixth of the chilies (approximately 1.5 oz) and set aside. For the remaining chilies, carefully cut them in half lengthwise, remove and discard the seeds and white membranes, then roughly chop the flesh. Important: Wash your hands thoroughly after handling the chilies and avoid touching your eyes.
Place the chopped chilies (including the reserved portion with seeds), peeled garlic cloves, and 1/2 cup of the rice wine vinegar into a food processor. Pulse and process until the mixture is finely chopped and well combined.
Transfer the processed chili mixture into a medium saucepan. Add the honey and the remaining 1 cup of rice wine vinegar. Stir well to combine all ingredients.
Heat the sauce over low heat for approximately 5 minutes, stirring occasionally, until the honey is fully dissolved. Increase the heat to bring the sauce to a gentle boil.
Once boiling, reduce heat to maintain a gentle simmer. Cook for 20 to 25 minutes, stirring occasionally, until the sauce thickens noticeably but still flows easily. The sauce will continue to thicken as it cools.
Remove the saucepan from heat and allow the sauce to cool completely to room temperature. Transfer to clean, airtight containers and store in the refrigerator for up to several weeks.
