1/4 cup gluten-free tamari or soy sauce

1/4 cup rice vinegar, divided

2 tablespoons toasted sesame oil

2 garlic cloves, minced

1 cup peeled, seeded, and julienned cucumber

1 cup julienned radishes

Directions

  1. In a large bowl, whisk together the tamari, 1 tablespoon of the rice vinegar, sesame oil, minced garlic, honey, and Sriracha until well combined. Set the dressing aside.

  2. In a separate bowl, combine the julienned cucumber, julienned carrots, julienned radishes, and sliced scallions. Add the remaining 3 tablespoons of rice vinegar and salt, then toss well. Let this vegetable mixture stand for 10 minutes at room temperature, tossing occasionally to allow flavors to meld.

  3. Bring a large pot of salted water to a rolling boil. Add the brown rice spaghetti and cook according to package directions until al dente, stirring occasionally to prevent sticking.
