½ pound White button mushrooms, finely chopped
½ pound Cremini mushrooms, finely chopped
90% lean ground beef
1½ tablespoons Canola oil
½ cup Yellow onion, chopped
1 clove Garlic clove, minced
8 ounces No-salt-added tomato sauce
1 tablespoon Chili powder
3 teaspoons Brown sugar
1 teaspoon Cider vinegar
⅛ teaspoon Ground black pepper
4 Whole-wheat sandwich buns
Directions
Rinse both white button mushrooms and cremini mushrooms, then pat dry with paper towels. Using a sharp knife or food processor, chop both varieties into small, uniform pieces roughly the size of ground beef to mimic the finished texture.
Heat a large sauté pan over medium-high heat. Once hot, add the canola oil and swirl to coat the pan.
Add the chopped ground beef and both types of mushrooms to the hot pan. Stir occasionally and cook for 8–10 minutes until the ground beef is fully cooked through (reaching an internal temperature of 160°F) and the mushrooms have released their moisture and begun to brown slightly.
Using a slotted spoon, transfer the beef and mushroom mixture to a clean plate or bowl, leaving any excess liquid in the pan.
Add the chopped onion and minced garlic to the pan. Sauté for 3–4 minutes, stirring occasionally, until the onion becomes translucent and softened and the garlic is fragrant and light golden.
Return the cooked beef and mushroom mixture to the pan. Add the tomato sauce, chili powder, brown sugar, cider vinegar, and ground black pepper. Stir well to combine all ingredients.
Reduce the heat to medium-low and simmer for 10 minutes, stirring occasionally, allowing the flavors to meld and the sauce to thicken slightly.
Remove from heat. Toast or lightly warm the whole-wheat buns, then divide the mushroom beef mixture equally among the four buns and serve immediately.
