Ingredients
6 ounces 2% fat Greek yogurt
3/4 cup spelt flour
1/2 cup rolled oats
1/2 tablespoon baking powder
3/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 large egg
1 tablespoon melted coconut oil
1 teaspoon vanilla extract
1/2 cup grated fresh zucchini
Directions
Preheat your waffle maker to medium-high heat. In a medium mixing bowl, combine the spelt flour, rolled oats, baking powder, ground cinnamon, and salt. Whisk together until evenly distributed and set aside.
In a large mixing bowl, whisk together the Greek yogurt, egg, melted coconut oil, and vanilla extract until well combined and smooth. Gently fold in the grated zucchini until evenly incorporated.
Add the dry ingredient mixture to the wet ingredients and stir just until combined, being careful not to overmix. The batter will be thick, which is normal and desired for a sturdy waffle structure.
Lightly coat the waffle maker with non-stick spray if needed. Spoon enough batter onto each section to cover the cooking surface, working in batches as needed. Close the lid and cook until golden brown and crispy, approximately 4-5 minutes per waffle, depending on your machine.
Transfer the cooked waffles to a plate and serve warm. Drizzle with maple syrup or your favorite toppings and enjoy immediately.
