Ingredients

1 handful Applewood chips

8 Grass-fed uncured beef hot dogs

8 Bacon strips

1 cup Paleo chili

Directions

  1. Soak the applewood chips in cold water for 1 hour to prepare them for smoking. Once fully saturated, remove them from the water, pat them dry with paper towels, and transfer to a smoker box.

  2. Place the smoker box on your grill and preheat the grill to high heat. This will activate the chips to begin producing smoke.

  3. While the grill is preheating, wrap each hot dog with a single strip of bacon, spiraling it around for even coverage. Secure both ends with toothpicks to keep the bacon from unwrapping during cooking.

  4. Pour the paleo chili into a small cast-iron pot suitable for grill cooking. This will allow the chili to absorb the smoky flavors from the chips during grilling.

  5. Once the smoker box is producing heavy smoke, reduce the grill heat to low. Carefully place the bacon-wrapped hot dogs and the cast-iron pot of chili on the grill grates.

  6. Cook for 30-40 minutes, turning the hot dogs every 10 minutes to ensure even cooking and crispy bacon on all sides. The bacon should render and brown to a golden-crispy texture.

  7. Once the bacon is crispy and cooked through, remove everything from the grill. Remove the toothpicks from the hot dogs and transfer to a serving plate.

  8. Spoon the hot, smoky chili generously over the bacon-wrapped hot dogs and serve immediately while hot.
