1/2 cup margarine, softened
1 cup honey
1 cup carrots, grated
2 egg whites, beaten
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
2 cups quick-cooking oatmeal, uncooked
1 cup raisins
Directions
Wash your hands thoroughly with soap and warm water before beginning.
Preheat your oven to 350°F. In a large mixing bowl, beat together the softened margarine and honey until well combined and creamy.
Add the grated carrots and beaten egg whites to the margarine-honey mixture, stirring until evenly incorporated.
In a separate bowl, combine the flour, baking powder, baking soda, salt, cinnamon, oatmeal, and raisins. Mix these dry ingredients together thoroughly.
Gradually add the flour-oatmeal mixture to the wet ingredients, stirring gently just until all the flour is moistened. Do not overmix; the batter should come together without being worked too much.
Drop spoonfuls of dough (about 1 teaspoon each) onto a greased baking sheet, leaving space between each cookie.
Gently flatten each cookie slightly with the back of a spoon to create an even thickness.
Bake at 350°F for 10 minutes, or until the edges are lightly browned. Remove from the oven and allow the cookies to cool briefly on the baking sheet before transferring to a wire rack.
