Szechuan Beef Stir-Fry

Ingredients
2 beef Ranch steaks, 3/4 inch thick (about 8 ounces each)
1 package (10 ounces) fresh vegetable stir-fry blend
3 tablespoons water
1 clove garlic, minced
1/2 cup prepared sesame-ginger stir-fry sauce
1/4 teaspoon crushed red pepper
2 cups hot cooked rice or brown rice, prepared without butter or salt
1/4 cup dry-roasted peanuts
Directions
Add the vegetable stir-fry blend and water to a large nonstick skillet. Cover and cook over medium-high heat for 4 minutes or until the vegetables are crisp-tender. Transfer the vegetables to a plate and set aside.
Cut the beef steaks into 1/4-inch thick strips.
Heat the same skillet over medium-high heat until hot. Add half of the beef strips and half of the minced garlic. Stir-fry for 1 to 2 minutes until the surface of the beef is no longer pink. Transfer to a clean plate and keep warm.
Repeat step 3 with the remaining beef strips and garlic.
Return all cooked beef and the reserved vegetables to the skillet. Pour in the sesame-ginger stir-fry sauce and sprinkle in the crushed red pepper. Cook and stir for 1 to 2 minutes until everything is heated through, ensuring the beef reaches an internal temperature of 145°F.
Divide the cooked rice among four bowls or plates. Spoon the beef and vegetable mixture over the rice and garnish each serving with dry-roasted peanuts.
