Ingredients

4 eggs, lightly beaten

1/4 cup vegetable oil

3 cups thinly sliced zucchini

1/4 cup chopped onion

1 cup biscuit mix

1 teaspoon dried parsley

1/3 cup grated cheddar cheese

1 cup grated carrots

Directions

  1. Wash your hands thoroughly with soap and water. Preheat the oven to 350°F and lightly grease a 13x9-inch baking dish with oil or cooking spray.

  2. In a large mixing bowl, combine the beaten eggs, vegetable oil, sliced zucchini, chopped onion, biscuit mix, dried parsley, grated cheddar cheese, and grated carrots. Stir until all ingredients are evenly distributed and well combined.

  3. Pour the mixture into the prepared baking dish, spreading it evenly across the bottom.

  4. Bake in the preheated 350°F oven for 25 minutes, or until the top is golden brown and the casserole is bubbly around the edges—a wooden toothpick inserted in the center should come out clean.

  5. Remove the baking dish from the oven and allow to cool for 2-3 minutes. Cut into 8 equal squares and serve warm.
