Ingredients
8 Wooden or metal skewers
2 pounds Ground beef
Kosher salt
Fresh cracked black pepper
16 Cherry tomatoes
1 Red onion
16 Dill pickle slices
4 American cheese slices
Deluxe sauce
Directions
If using wooden skewers, submerge them in water and let soak for at least 20 minutes to prevent burning during grilling.
Divide the ground beef into 16 equal portions and shape each into a compact ball roughly the size of a golf ball. Season all meatballs generously with kosher salt and fresh cracked black pepper.
Cut the red onion into quarters, then separate the layers into individual pieces. Cut each American cheese slice into 4 equal squares.
Thread the ingredients onto each skewer in the following pattern: begin with a piece of red onion, then add a cherry tomato, a dill pickle slice, and a seasoned beef meatball. Repeat this sequence one more time, then finish with a final piece of red onion. Prepare all 8 skewers this way.
Preheat your grill to medium-high heat.
Place the kabobs on the hot grill and cook for approximately 10 minutes, turning them several times to ensure even cooking and to lightly char the vegetables. Cook until the tomatoes and onions show browning and the beef meatballs are cooked through to an internal temperature of 160°F.
During the final 1–2 minutes of grilling, place one cheese square on top of each beef meatball on every kabob. Allow the cheese to melt completely.
Remove the kabobs from the grill and serve immediately with deluxe sauce for dipping or drizzling.
