Ingredients
1 (3.75-ounce) can sardines packed in olive oil
1 tablespoon mustard
1 tablespoon mayonnaise
Black pepper to taste
24 crackers (Triscuits or similar hearty variety)
Directions
Open the can of sardines and drain most of the oil, reserving about 1 teaspoon. Place the sardines in a small bowl.
Add the mustard and mayonnaise to the sardines and stir gently until the mixture is well combined but sardines remain in intact pieces.
Season with black pepper to taste and adjust the ratio of mustard and mayonnaise if needed to achieve your preferred balance.
Arrange crackers on a serving platter or individual plates.
Top each cracker with a small spoonful of the sardine mixture, making sure each serving includes a piece of sardine. Serve immediately.
Comments
This is a no-cook assembly that genuinely takes ten minutes or less, making it perfect for a weeknight when nothing else is ready. Every ingredient is stocked at Harris Teeter, Food Lion, Walmart, ALDI, and Kroger—sardines in can, mustard and mayo in condiment aisles, pepper from the spice rack, and crackers from the snack aisle, so no special trips are required. Cost per serving runs around $1.50 to $1.75, driven by the tin of sardines, which typically costs $2 to $3 depending on brand. The dish is a straight assembly with no reheating needed, but also no real leftovers since crackers go soft fast and the topping won't improve sitting overnight, making it a same-night eat that works well for lunch or a light supper for four.
