Ingredients

1 cup white rice

1 liter full cream milk

200 ml coconut milk

3 tablespoons brown sugar

8 pieces semisweet dark chocolate (70% cocoa)

Chocolate shavings for garnish

Directions

  1. Rinse the white rice under cold water until the water runs clear, then drain completely.

  2. Pour the full cream milk into a large heavy-bottomed pot and bring to a gentle boil over medium heat, stirring occasionally to prevent scorching.

  3. Slowly add the rinsed rice to the boiling milk, stirring constantly to prevent lumps from forming.

  4. Reduce heat to low and simmer, stirring frequently, for 25–30 minutes until the rice grains are completely tender and the mixture has thickened.

  5. Add the brown sugar and stir until fully dissolved, then add the coconut milk and mix well.

  6. Break the dark chocolate pieces into smaller fragments and add them to the pot, stirring constantly until the chocolate is completely melted and the mixture is smooth.

  7. Continue cooking on low heat for 2–3 minutes while stirring, allowing the flavors to meld and the kheer to reach a silky consistency.

  8. Remove from heat and let cool for 5 minutes, then divide into serving glasses or bowls.

  9. Top each serving with fresh chocolate shavings and serve warm or chilled according to preference.
