Ingredients

6 tablespoons Smooth natural peanut butter, stirred to combine

⅓ cup Packed dark brown sugar

3 tablespoons Seasoned rice vinegar

2 tablespoons Soy sauce

2½ teaspoons Hot chili paste (such as sambal oelek)

9 tablespoons Peach nectar, divided

3 Peaches or nectarines, each cut into 6 wedges

16 Uncooked large shrimp, peeled and deveined

6 heads Baby bok choy, halved lengthwise

Black pepper to taste

Salt to taste

Directions

  1. Preheat your grill to medium-high heat. In a medium bowl, whisk together the peanut butter, brown sugar, seasoned rice vinegar, soy sauce, and hot chili paste. Add 5 tablespoons of the peach nectar to the mixture and continue whisking until the sauce is smooth and well combined. Season the sauce to taste with black pepper, then set aside.

  2. Arrange the peach wedges, shrimp, and bok choy halves directly on the oiled grill grate. Brush all items lightly with the remaining 4 tablespoons of peach nectar, then brush them with approximately 1/4 cup of the prepared peanut sauce. Season everything lightly with salt and black pepper.

  3. Grill the peaches for about 2 minutes per side until they develop light charring and caramelization. Grill the shrimp for approximately 3 minutes per side until they turn opaque throughout and the internal flesh is no longer translucent (shrimp are fully cooked when they have changed from gray to pink and are opaque in the center). Grill the bok choy halves for about 3 minutes per side until they are just tender with light browning on the cut sides.

  4. Transfer the grilled shrimp, bok choy, and peaches to a serving platter, arranging them attractively. Drizzle some of the reserved peanut sauce over the top, and serve the remaining sauce on the side for guests to add as desired.
