Ingredients
1 tablespoon vegetable oil
1 medium onion, peeled and chopped
1 medium yellow squash, cut into small pieces
1 medium zucchini, cut into small pieces
1 red bell pepper, chopped into small pieces
1/2 teaspoon black pepper
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
Directions
Wash your hands thoroughly with soap and water before beginning food preparation.
Prepare all vegetables: peel and chop the onion into bite-sized pieces, cut the yellow squash and zucchini into small cubes or slices, and chop the red pepper into small pieces. Set aside.
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Once the oil is hot, add the chopped onion to the pan and stir continuously for about 1 minute until fragrant and beginning to soften.
Add the black pepper, dried basil, and dried oregano to the pan, stirring well to distribute the spices evenly with the onion.
Add the yellow squash, zucchini, and red pepper to the pan and stir continuously. Cook for 3 to 5 minutes over medium heat until all vegetables are tender but still maintain a slight crunch.
Transfer the finished stir fry to a serving dish and serve hot while the vegetables are at their peak freshness.
