2 1/2 cups blackberries
2 1/2 cups blueberries
3/4 cup granulated sugar
1/4 cup cornstarch
1/2 teaspoon ground cinnamon
1 Zest of 1 lemon
2 unbaked 9-inch pie crusts
1 large egg
1 teaspoon water
All-purpose flour for dusting (as needed)
Directions
Preheat your oven to 400°F and line a large baking sheet with parchment paper. On a lightly floured work surface, roll out one pie crust disk into an approximately 13-inch circle.
Carefully transfer the rolled crust to a 9 or 10-inch pie dish, allowing it to rest in the bottom and up the sides.
Roll out the second pie crust disk and set aside. In a large mixing bowl, whisk together the granulated sugar, cornstarch, ground cinnamon, and lemon zest until well combined.
Add the blueberries and blackberries to the sugar mixture and gently fold together until all the berries are evenly coated.
Pour the berry filling into the crust-lined pie dish, spreading it evenly.
Place the second pie crust over the filling and press the edges of the top and bottom crusts together firmly to seal. Fold the overhanging edges inward and crimp decoratively with your fingers or a fork.
Using a sharp knife, cut 4-5 slits into the top crust to allow steam to escape during baking.
In a small bowl, whisk together the egg and water to create an egg wash. Brush the egg wash evenly over the top crust.
Place the pie on the prepared baking sheet and bake for 45 to 50 minutes, until the crust is golden brown and berry juices are bubbling visibly through the vents.
Remove the pie from the oven and allow it to cool completely at room temperature before slicing, which helps the filling set properly.
