Ingredients

2 cups Spinach, packed

½ cup Tomato, chopped

¼ inch piece Ginger

1 Garlic clove

1 teaspoon Garlic paste

1 Green chili, small

1½ cups Water

1 teaspoon Ghee

¼ cup Milk

¼ teaspoon Black pepper powder

to taste Salt

Directions

  1. In a deep pot, combine the spinach, tomato, ginger, garlic clove, green chili, and water. Bring to a boil over medium heat and simmer for 10-12 minutes until the tomato and spinach are very soft.

  2. Allow the mixture to cool slightly, then transfer to a blender and puree until completely smooth.

  3. Heat the ghee in a separate pan over medium heat. Add the garlic paste and sauté for about 30 seconds until fragrant.

  4. Pour in the spinach puree, season with salt and black pepper powder, and simmer for 5 minutes, stirring occasionally.

  5. Stir in the milk and bring the soup back to a gentle boil. Serve immediately while hot.
