Creole Fried Rice

Ingredients
2 tbsp Canola oil
8 oz Andouille sausage, thinly sliced
1 Large onion, chopped
1 Large green bell pepper, chopped
3 Garlic cloves, minced
1 tbsp Creole seasoning
4 cups Cooked white rice
1 15 oz can Canned kidney beans, rinsed and drained
2 tbsp Tomato paste
Green onions, sliced, for serving
Hot sauce, for serving
Directions
Heat the canola oil in a large skillet over medium-high heat. Add the sliced andouille sausage and cook until lightly browned, about 3 to 4 minutes, stirring occasionally. Transfer to a plate and set aside.
In the same skillet, add the chopped onion and green bell pepper. Sauté for 4 to 5 minutes, stirring frequently, until softened. Add the minced garlic and Creole seasoning, cooking for about 1 minute until fragrant.
Stir in the tomato paste and cook for 1 minute, allowing it to caramelize slightly. Add the cooked rice, breaking up any clumps, and mix well with the vegetables and seasonings.
Return the cooked sausage to the skillet along with the rinsed and drained kidney beans. Toss everything together until evenly combined and heated through, about 2 to 3 minutes.
Divide among serving bowls and top with sliced green onions. Serve with hot sauce on the side for guests to adjust the heat level to their preference.
