Ingredients
1 package Uncle Ben's Spanish Style Ready Rice
1 (15 ounce) can refried beans
10 (8 inch) flour tortillas
1 cup shredded cheddar cheese
1 cup shredded lettuce
1 (15 ounce) can diced tomatoes with chilies, drained
1 cup spicy guacamole
1/2 cup sour cream
Directions
Prepare the Spanish style rice according to package directions and set aside.
Transfer the refried beans to a microwave-safe bowl and heat in the microwave for at least 1 minute until warmed through.
Wrap the flour tortillas in a damp paper towel and microwave for 20-30 seconds to soften them for easy rolling.
Lay one tortilla flat on a clean work surface and spread a layer of the warm refried beans down the center, leaving space at the edges.
Add a small portion of cooked rice on top of the beans, followed by shredded cheddar cheese.
Top the cheese with shredded lettuce, then add a spoonful of the drained diced tomatoes with chilies.
Add a dollop of spicy guacamole and finish with a spoonful of sour cream.
Fold the sides of the tortilla inward slightly, then roll it up tightly from bottom to top, tucking in the sides as you roll to keep the filling contained.
Repeat with the remaining tortillas and filling ingredients until all 10 burritos are assembled.
Serve the burritos immediately while still warm.
Comments
All ingredients are readily available at any Charlotte major chain—Spanish rice seasoning packets and canned diced tomatoes with chilies are staples at Harris Teeter, Food Lion, Walmart, and ALDI. At roughly $1.50–$2 per burrito for bulk-buy quantities, this is genuinely cheap, though guacamole or fresh avocados drive the cost up if made from scratch rather than store-bought. The stated 20 minutes is honest if you're using pre-cooked rotisserie rice and canned beans, though rolling ten burritos cleanly takes practice and real kitchen time. This is solid weeknight food that reheats well in the microwave, feeds a family without fuss, and requires no special attention once assembled, though the filling ratios matter—pack them too loose and they fall apart.
