½ cup packed brown sugar
¼ cup light margarine or butter spread
¼ cup creamy peanut butter
1 tablespoon egg whites
1 teaspoon vanilla extract
¼ cup rolled oats
½ cup chocolate chips (dark, milk, or semisweet)
½ teaspoon baking soda
Pinch of salt
Directions
In a large mixing bowl, beat together the brown sugar and margarine until the mixture is light and creamy, about 1-2 minutes.
Add the egg whites and vanilla extract to the bowl. Beat until the mixture is smooth and well combined.
Stir in the peanut butter until fully incorporated into the dough.
Add the rolled oats, baking soda, and salt to the bowl. Mix gently until a soft dough forms.
Fold in the chocolate chips until evenly distributed throughout the dough.
