Sesame-Crusted Tofu

Ingredients
1 block firm tofu (14 oz), pressed and cut into 8 slices
1/4 cup soy sauce
1/4 cup fresh orange juice
1/2 teaspoon toasted sesame oil
5 tablespoons sesame seeds
5 tablespoons cornstarch
2 tablespoons vegetable oil, for pan-frying
Directions
Press the tofu block firmly between paper towels or a clean kitchen towel to remove excess moisture, or use a tofu press if available. Let sit for at least 5 minutes to ensure the tofu is very dry.
Cut the pressed tofu block horizontally into 8 equal slices, each about 1/2 inch thick.
In a small bowl, whisk together the soy sauce, orange juice, and toasted sesame oil. Set the glaze aside.
Mix the sesame seeds and cornstarch together in a shallow dish.
Working one at a time, coat each tofu slice evenly on both sides with the sesame seed and cornstarch mixture, pressing gently so the coating adheres.
Heat the vegetable oil in a large skillet over medium-high heat until shimmering, about 2 minutes.
Carefully place the coated tofu slices into the hot oil in a single layer. Fry for 3–4 minutes until the bottom is golden brown and crispy, then flip.
Fry the second side for another 3–4 minutes until golden brown and crispy. The tofu should be heated through and the coating should be deeply golden.
Transfer the tofu slices to a serving plate and drizzle the orange-soy glaze over the top. Serve immediately while the tofu is still crispy.
