Ingredients
½ cup old-fashioned rolled oats
1 cup water or milk
pinch of salt
¼ cup egg whites, beaten
¼ cup pumpkin puree
1 tablespoon brown sugar
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
pinch of ground cloves
pinch of ground allspice
Directions
Combine oats, water or milk, and salt in a small saucepan. Bring to a boil over medium-high heat, stirring occasionally until the mixture begins to thicken, about 3–4 minutes.
Reduce heat to medium-low. While stirring the oatmeal continuously with one hand, slowly pour the beaten egg whites into the pan with the other hand. Stir constantly to incorporate the egg whites smoothly into the hot oatmeal; this prevents them from scrambling.
Once the egg whites are fully incorporated, add the pumpkin puree, brown sugar, cinnamon, ginger, cloves, and allspice. Stir well to combine all ingredients.
Continue heating and stirring until the oatmeal is warmed through and reaches your desired consistency, about 2–3 minutes. The egg whites will reach a safe temperature (160°F) as the mixture remains hot.
Transfer to a serving bowl and serve immediately with your choice of toppings.
