Ingredients
1/2 cup jarred caramel sauce
3 tablespoons solid shortening
1/2 cup (about 3 oz) butterscotch chips
3 cups vanilla ice cream (sugar-free or regular)
1/2 cup chunky peanut butter
1 cup salted caramel flavored peanuts
Directions
Place the ice cream container on your counter and allow it to soften for approximately 10 minutes until it reaches a scoopable consistency.
While the ice cream softens, prepare four small cups to serve as molds for the bars.
In a small microwave-safe bowl, combine the butterscotch chips and solid shortening. Microwave in 30-second intervals, stirring between each interval, until the mixture is completely melted and smooth.
Spoon a thin layer of the melted butterscotch-shortening mixture into the bottom of each cup, coating evenly.
Divide half of the softened vanilla ice cream evenly among the four cups, pressing gently to compact.
Drizzle 2 tablespoons of the jarred caramel sauce over the ice cream layer in each cup.
Add 2 tablespoons of chunky peanut butter to each cup, swirling it gently into the ice cream with a knife.
Sprinkle 1/4 cup of the salted caramel flavored peanuts evenly into each cup.
Top with the remaining softened vanilla ice cream, dividing equally among the cups.
Finish each bar with a final drizzle of the remaining caramel sauce and a thin layer of the reserved melted butterscotch-shortening mixture.
Freeze the completed bars for at least 4 hours or until firm. Serve directly from the freezer.
