Ingredients

Canola oil for frying, plus 1 tablespoon

8 oz Large shrimp, peeled, deveined, and finely chopped

2 tbsp Sofrito

1 tbsp Tomato paste

1 Plum tomato, finely chopped

3 Green plantains, cut diagonally into 1-inch-thick rounds

2 tbsp Kosher salt

Directions

  1. Heat 1 tablespoon of canola oil in a large skillet over medium-high heat. Add the finely chopped shrimp and cook for 2 minutes, stirring frequently, until they begin to turn pink.

  2. Stir in the sofrito and tomato paste, cooking for 1 minute until fragrant and well combined with the shrimp.

  3. Add the finely chopped plum tomato and continue cooking for 3–4 minutes, stirring occasionally, until the shrimp are fully cooked through and the sauce thickens slightly. Season to taste and keep warm on low heat.

  4. Fill a heavy-bottomed pot or deep skillet with canola oil to a depth of about 2 inches. Heat the oil to 350°F.

  5. Working in batches to avoid overcrowding, carefully place the plantain rounds into the hot oil and fry for 3–4 minutes per side until light golden and tender. Remove with a slotted spoon and drain on paper towels.

  6. While the plantains are still warm and soft, place each round on a cutting board or between plastic wrap and gently flatten it to about half its original thickness using a plantain press or the bottom of a glass.

  7. Return the flattened plantain rounds to the hot oil and fry for 2–3 minutes per side until crispy and golden brown. Drain on fresh paper towels and sprinkle with kosher salt.

  8. Arrange the crispy plantain fritters on a serving platter and top with the warm stewed shrimp sauce. Serve immediately.
