Refreshing frozen fruit cups made with ripe bananas, creamy strawberry yogurt, fresh thawed strawberries, and tropical pineapple. These make-ahead treats are naturally sweet, dairy-light, and perfect for a chilled dessert or snack. Prepare in advance and enjoy straight from the freezer anytime.

Ingredients

3 medium ripe bananas

24 ounces non-fat strawberry yogurt

1 cup frozen strawberries, unsweetened, thawed with juice

1 cup crushed pineapple in juice, undrained

Directions

  1. Wash your hands thoroughly with soap and warm water before beginning.

  2. Line 18 muffin cups with paper baking liners. Arrange the lined muffin tin on a level freezer-safe surface.

  3. Peel and dice the bananas into small chunks, or mash them to your preferred texture. Transfer to a large mixing bowl.

  4. Add the non-fat strawberry yogurt, thawed frozen strawberries with their juice, and crushed pineapple with its juice to the bowl. Stir all ingredients together until evenly combined.

  5. Spoon the fruit mixture evenly into each prepared muffin cup, filling them to just below the rim. Place the muffin tin in the freezer and freeze for at least 3 hours, or until the mixture is completely firm and frozen solid.

  6. Once fully frozen, remove the muffin tin from the freezer. Transfer the frozen cups to a freezer-safe plastic bag or airtight container and store in the freezer for up to 2 weeks.

  7. When ready to serve, remove a frozen cup from the freezer and gently peel away the paper liner. Let it stand at room temperature for about 10 minutes to soften slightly before eating.
