Ingredients
3 large eggs
2 to 3 pre-cooked sausage links, sliced
1/2 green bell pepper, chopped
2 slices onion, chopped
3 slices tomato, chopped
1 tablespoon Cajun spice blend
2 slices mozzarella cheese
1 tablespoon oil or butter for cooking
Directions
Crack the eggs into a bowl and whisk until well combined. Add the sliced sausage, chopped green pepper, chopped onion, chopped tomato, and Cajun spice blend to the egg mixture. Stir gently until all ingredients are evenly distributed.
Heat 1 tablespoon of oil or butter in a large skillet over medium-high heat until shimmering. Pour the entire egg and vegetable mixture into the skillet, spreading it evenly.
Allow the omelet to cook undisturbed for 4 to 5 minutes until the bottom is set and beginning to brown. Using a spatula, carefully flip the omelet in sections or all at once if possible. Cook for another 2 to 3 minutes until the second side is lightly browned.
When the egg is nearly set and reaches an internal temperature of 160°F, arrange the mozzarella cheese slices on one half of the omelet. Fold the omelet in half over the cheese and slide onto a plate.
Serve immediately. If desired, accompany with home fries on the side.
