Ingredients

4 whole-wheat flour tortillas (8 inch)

2 cups shredded lettuce

2 cups shredded pressure-cooked beef roast

1 cup chopped green and red bell peppers

½ cup shredded reduced-fat Cheddar cheese

½ cup salsa, optional

¼ cup light sour cream, optional

Directions

  1. Warm the whole-wheat tortillas in a skillet or directly over a gas flame for about 30 seconds per side until pliable and lightly browned.

  2. Place a warm tortilla on a clean work surface. Arrange ½ cup shredded lettuce down the center.

  3. Top the lettuce with ½ cup of the shredded pressure-cooked beef roast.

  4. Add approximately ¼ cup of the chopped green and red bell peppers over the beef.

  5. Sprinkle 2 tablespoons of the shredded reduced-fat Cheddar cheese over the vegetables.

  6. If using, add 2 tablespoons of salsa and 1 tablespoon of light sour cream to each taco.

  7. Fold the tortilla in half or roll it into a cylinder, depending on your preference. Repeat with the remaining three tortillas and fillings.

  8. Serve immediately while warm.
