Creamy Cauliflower Sauce with Pasta

Ingredients
1 head cauliflower, separated into florets
4 garlic cloves, smashed
1/4 cup olive oil
3 fresh thyme sprigs
1/2 teaspoon creole seasoning
3 cups vegetable or chicken broth
1 pound pasta
1 (15 oz) can butter beans, drained and rinsed
1 cup fresh basil leaves, loosely packed
Salt and black pepper to taste
Directions
Preheat your oven to 425°F. Toss the cauliflower florets with 2 tablespoons of olive oil, salt, and pepper on a baking sheet. Roast for 20–25 minutes until golden and tender, stirring halfway through.
While the cauliflower roasts, bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente. Drain and set aside, reserving 1 cup of pasta water.
Heat the remaining 2 tablespoons of olive oil in a large saucepan over medium heat. Add the smashed garlic cloves and thyme sprigs, stirring frequently until fragrant, about 2 minutes.
Stir in the creole seasoning and cook for 30 seconds to bloom the spices.
Add the broth and bring to a gentle simmer.
Add the roasted cauliflower and drained butter beans to the broth, stirring to combine. Simmer for 3–5 minutes to allow the flavors to meld.
Remove the thyme sprigs and carefully transfer the mixture to a blender in batches. Blend until smooth and creamy, adding reserved pasta water as needed to reach your desired consistency.
Return the sauce to the saucepan and stir in the fresh basil. Taste and adjust seasoning with salt and pepper.
Toss the cooked pasta with the creamy cauliflower sauce until evenly coated. Serve immediately.
