Ingredients

2 cups Water

1½ teaspoons Ceylon black tea leaves

7 ounces Evaporated milk or heavy cream

3 tablespoons Sweetened condensed milk, divided

Directions

  1. Bring 2 cups of water to a boil in a kettle or pot over medium-high heat.

  2. Add the Ceylon black tea leaves to the boiling water and steep for 3–4 minutes until the tea is deeply brewed and richly colored. Strain the tea through a fine sieve or tea strainer into a large measuring cup or pitcher, discarding the tea leaves.

  3. Divide 2 tablespoons of sweetened condensed milk equally among four serving cups (approximately 1.5 teaspoons per cup).

  4. Pour the hot brewed tea into each cup over the condensed milk, filling them about three-quarters full.

  5. Pour the evaporated milk or heavy cream into a separate small pitcher or measuring cup.

  6. Using two cups or a large mug and small pitcher, begin pouring the hot tea mixture back and forth between the containers from a height of 12–18 inches, allowing it to fall and create an aerated, frothy layer. Repeat this 'pulling' motion 8–10 times, alternating directions, until a thick foam forms on the surface.

  7. Carefully pour the evaporated milk into the frothed tea, holding back the foam with a spoon so the milk flows underneath. Top each cup with the reserved foam.

  8. Drizzle the remaining 1 tablespoon of sweetened condensed milk over the foam, or add more to taste. Serve immediately while hot and frothy.
