Ingredients

1 cup grass-fed butter or ghee

2 sprigs fresh rosemary, finely chopped

2 sprigs fresh thyme, finely chopped

1 Zest of 1 lemon

1 lemon, thinly sliced for garnish

4 lobster tails (about 2 pounds), split lengthwise in half

¼ cup dry white wine

Directions

  1. Preheat your broiler. Line a baking sheet with aluminum foil and arrange the split lobster tails with the cut sides facing up.

  2. In a medium saucepan, melt the butter over medium heat. Once melted, add the chopped rosemary, thyme, and white wine. Stir gently and let the mixture infuse for about 10 minutes until fragrant, then remove from heat.

  3. Generously brush the lobster tail meat with the herb butter mixture using a pastry brush, making sure to coat all exposed meat.

  4. Place the baking sheet under the broiler with the lobster tails cut-side up. Broil for 2 to 3 minutes until the meat is opaque and just starting to brown at the edges.

  5. Carefully remove the baking sheet from the broiler and flip the lobster tails over so the shell side is now facing up. Brush the exposed meat with additional herb butter and return to the broiler for about 2 minutes to develop more color on the meat.

  6. Remove from the broiler again and flip the tails back to cut-side up. Brush once more with the remaining herb butter and broil for a final 1 to 2 minutes until the lobster meat is firm and opaque throughout, reaching an internal temperature of 145°F when tested with a meat thermometer.

  7. Transfer the broiled lobster tails to a serving platter and garnish with fresh lemon slices and the lemon zest. Serve immediately with any remaining warm herb butter on the side for dipping.
