1 large head green cabbage

3 medium carrots

¼ cup olive oil

¼ cup tamari soy sauce

2 teaspoons ground ginger

1 teaspoon sea salt

1 teaspoon black pepper

2 tablespoons sesame seeds

Directions

  1. Trim the base from the cabbage and cut it crosswise into 1-inch-thick discs using a sharp serrated knife. Julienne the carrots into thin matchsticks.

  2. In a large bowl, combine the cabbage discs and julienned carrots. Add the tamari, olive oil, ground ginger, sea salt, black pepper, and sesame seeds.

  3. Toss everything together until the cabbage and carrots are evenly coated with the seasoning mixture.

  4. Preheat your grill to medium-high heat. Transfer the coated cabbage mixture to a large piece of heavy-duty aluminum foil or a disposable foil pan.

  5. Place the foil pan or foil packet on the grill. For the first 20 minutes, open and stir the cabbage every 5 minutes to ensure even cooking and prevent sticking.

  6. After 20 minutes, increase your attention and stir more frequently. Continue grilling until the cabbage has transformed from bright green to golden-brown and yellow-brown, with some charred crispy edges. Total cook time will typically be 25–35 minutes depending on heat intensity.

  7. Transfer to a serving dish. Serve as a side dish for 4–6 people, or as a hearty main course portion for 2.
