Ingredients

1 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces with large veins removed

5 ounces pork fat or lard

1 onion, diced

1 garlic clove, minced

1/2 cup Frank's Original Red Hot Sauce

1/4 cup water

1 tablespoon white vinegar

1/4 teaspoon Worcestershire sauce

1/2 teaspoon Tabasco or other hot sauce

1 pinch cayenne pepper

Directions

  1. In a large, heavy-bottomed pot or Dutch oven, melt the pork fat over medium heat. Once melted, add the diced onion and cook, stirring occasionally, until softened and translucent, about 5 minutes.

  2. Add the minced garlic to the pot and cook for another minute, stirring constantly, until fragrant.

  3. Add the chicken thigh pieces to the pot, stirring to coat them with the fat. Cook for 3-4 minutes to lightly sear the outsides.

  4. Pour in the Frank's Red Hot Sauce and water, stirring to combine. Add the white vinegar, Worcestershire sauce, Tabasco, and cayenne pepper. Stir well to distribute all seasonings evenly.

  5. Reduce heat to low and cover the pot. Simmer gently for 75-85 minutes, stirring occasionally, until the chicken is very tender and nearly falling apart. The internal temperature of the chicken should reach 165F.

  6. Remove the pot from heat and let the mixture cool slightly, about 10 minutes. Using two forks or an immersion blender, shred and blend the chicken and fat together until you reach your desired consistency—chunky or smooth, depending on preference.

  7. Transfer the rillettes to a serving bowl or storage container. Serve warm or chilled with crackers, toasted bread, or fresh vegetables.
