Ingredients
10 oz Orzo pasta
1 cup Frozen peas
2½ Ripe avocados
½ cup Crumbled bacon
1 tsp Fresh garlic, minced
Crumbled feta cheese
Salt
Black pepper
Directions
Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to the package directions until al dente.
During the last 3-4 minutes of cooking, add the frozen peas to the pot with the orzo.
Drain the orzo and peas thoroughly in a colander, then return them to the warm pot off the heat.
While the pasta is still warm, halve the avocados, remove the pit, and use a spoon to scoop the flesh directly into the pot with the orzo.
Add the minced garlic, crumbled bacon, salt, and black pepper to the pot. Gently toss and fold the ingredients together until the avocado begins to soften and creates a light, creamy coating.
Divide the orzo mixture among four bowls or plates. Top each serving with crumbled feta cheese. Serve immediately while warm, allow to cool to room temperature, or refrigerate and serve cold.
