Ingredients

1 cup Unsweetened cocoa powder

½ cup Unsweetened applesauce

3 tablespoon Honey

¼ teaspoon Vanilla extract

16 whole Fresh blueberries, rinsed and dried

Directions

  1. In a medium bowl, combine the cocoa powder, applesauce, honey, and vanilla extract. Stir together until the mixture is completely smooth and uniform, with no lumps.

  2. Cover the bowl and refrigerate the chocolate mixture for at least 1 hour, or up to 2 days until it is firm enough to handle.

  3. Remove the chocolate mixture from the refrigerator and divide it into 16 equal portions. Working with one piece at a time, roll it between your palms into a small ball, then gently flatten it into a thin circle.

  4. Place one fresh blueberry in the center of the chocolate circle. Carefully fold and pinch the chocolate up and around the blueberry, sealing it completely inside.

  5. Re-roll the chocolate-covered blueberry gently between your palms to form a smooth, round truffle. Place it on a sheet of wax paper and repeat with the remaining chocolate mixture and blueberries.

  6. Once all truffles are formed, refrigerate them until ready to serve.
